Some of you asked me to post healthy crepes recipe. So there you go! The traditional way is to use the all-purpose flour. But! We are trying to make everything better and healthier. So try this instead:

You will need (for one person, if more-double the amounts accordingly):

  • 1 egg (if you are against egg yolks you can use two egg whites instead)
  • 1 tsp. cinnamon
  • 1 tsp. raw organic cacao (to give that brown colour)
  • 1 banana
  • 1/3 cup oats (you can buy them blended or blend yourself! )
  • 1/4 cup almond milk
  • 4 strawberries
  • anything else you like for topping


1. Blend oats, cacao and cinnamon together into a powder, this is going to be your flour!
2. Mix an egg (or two egg whites) in a separate bowl and add almond milk. Blend it all or mix really well!
3. Add your blended oats (flour) to your egg bowl-blend/mix everything together!
4. Take your batter and pour into a pan on low-medium heat. Just a thin thin thin layer!
5. After you see mini bubbles form on top, flip it! After some time you will be able to flip it in the air haha, promise! P.S. You don’t have to fully bake them, just make sure they are not sticky anymore and that they have a shape.
6. Now fill up your crepe with your chosen ingredients. I cut a banana into half (horizontal) and put a little nuttela (1teaspoon), then roll it up! You can experiment with it: put some berries, coconut shaves, etc.
7. When you have your rolls ready, put them back to the pan and bake it until it gets a little crispier. You will see, simple as that! :)
8. Then put hot crepes on the plate and play with toppings. I always use a fat free Greek Yogurt or honey and lots of strawberries. Yum!!!
It’s a very lean recipe using natural ingredients. Perfect meal if you don’t want something too heavy. And you can easily wow your friends or family with it, because it gives you a freedom to be creative with serving (it can be sooo breath taking haha)!
By the way. There are many folding options. I will list some below!Sorry, I forgot to take a picture of my final result, will do some next time especially for you!

Folding Options:


Place the crepe with the best side down. Put the filling in a line down the center of the crepe. Fold the right side just past the middle and then do the same with the left. This method shows the filling at the ends.


Crepe Suzette Fold:

Place the crepe best side down. Spoon filling into the center of the crepe. Fold in half. Fold in half again forming triangle four layers thick.


Pocket Fold 

Place the crepe best side down. Spoon filling in center of crepe. Fold both sides over filling, then fold bottom and top.


The Roll (the ones I like to do with bananas, because it looks cute and it’s easier):

Spread filling over worse side of crepe leaving a slight edge. Roll-up crepe. Depending on filling, serve sliced.


No Fold-Crepe Gateau

Place best side of crepe down. Spread filling over crepe leaving a slight edge. Top with another crepe and cover with filling. Keep repeating for a lovely Gateau.

Gloves and scarfs are not helping at all! Winter is definitely coming, very quickly! But inside it’s getting warm while thinking about Christmas, getting into that festive spirit. I really do love winter. Well, not the fact that during all the celebrations we overdose on food haha and literally look like big muffins, but this time of the year is magical.

Yesterday we visited Manchester‘s most famous Christmas Market. Oh Lord, it was amazing. It looked like the whole city was celebrating. Christmas Market is an absolutely amazing place to shop if you want to get something really unique and cool like dancing Christmas trees/ Christmas hats haha, very salty cheese or even if you want to bath in hot chocolate or cupcakes it’s the best place to do so! Either way it’s a really good place to walk around and spend the time somewhere nice.

This year the market is celebrating its 5th year and is taking place over nine different places around the city, each with its own distinct character and atmosphere.

We brought home some Christmas decorations, tried to soak up the atmosphere haha. Will post them on instagram later.

Finally! Finally we have Wi-Fi at home, haha. Sounds stupid, but I was waiting for this day to come for almost three weeks now. I don’t really understand why it always takes so long to just activate some codes/accounts or whatever they’re doing! Hah. But it’s nooot about this here. I’ll try to post more often from now on, muffins. I missed u!

When I posted this picture on my social media platforms I’ve received some comments like ‘is that your lunch?’, ‘that’s not enough’, ‘it’s a dessert’ etc. Well, for me the size of my meal doesn’t describe if it’s lunch, breakfast, supper or a snack. My meal doesn’t have to make me full or something like that. I believe that you have to eat as much as you consume. No more no less. So it’s not about being FULL all the time, it’s about having energy to do things.

This low fat lunch/dessert is my recent discovery. I do like to eat cottage cheese or quark for my protein intake as I don’t eat meat, so I always try to find new ways of doing that. And this one is called PARFAIT. Originally from France, parfait meaning ‘perfect’ is commonly described as a frozen dessert (you were right haha). But this is more of my type of parfait- quark one! layered dessert in a glass with quark, fruit, granola, cinnamon.


Quark, Granola, Strawberry Parfait

You will also need: granola or muesli, cinnamon, some nuts, etc.

Blend the quark cheese until smooth, adjust sugar if desired. In my case, I’ve used low fat and UNSWEETENED quark, so alone it really tastes poor, but I do mix it with banana and cinnamon, so it does taste better then! Take serving glasses and heap about 2 tbsp in the bottom of each, followed by 2 tbsp. of quark filling, then chopped bananas, strawberries or anything else. Repeat ending with a layer of quark filling. Top the glass with your favorite filling (here you see strawberries), it can be anything: almonds, raisins, cinnamon, granola etc. Chill until ready to serve! Vuolia. Easy breezy.




I will share my recent breakfast options in this post. So if you need any ideas what to eat in the morning, there you go! Haha. Well, most of my mornings starts with a fiber enriched porridge (oatmeal, oat bran, etc ), cottage cheese, quark or sometimes protein pancakes on weekends (Sunday’s tradition). I do eat oatmeal almost every morning when I am in need of more energy (gym in the morning or so). I also add a scoop of whey protein (stealing from my boyfriend at the moment haha). But, when I know that I will be sitting and staring at my computer all morning, I do eat cottage cheese, quark or fruit salad instead, because I don’t need much of an energy then. It would be boring to eat same and same foods every day and this is why I try to be more creative with my toppings. As you can tell, I almost put everything what I can think off on my meals haha. But it works really well for me. Also, to compliment my meals in the morning I always drink a big glass of lemon (orange, cucumber, mint) water and my vitamins! Continue reading
